Having some quick and easy recipes for lunch or dinner can make a big difference in our health outcomes.
I like this recipe because it is full of flavour and easy to make. You can even use pre-cut veggies to simplify it even more. Most of the time taken is in cutting up some veg. So if time is short, simplify and take advantage of pre-cut food.
I had some left-over slow cooked lamb which I used for this photo, but just about any of your preferred protein sources would work.
My husband will sometimes take some noodles and tinned tuna or salmon to work and use boiling water and a microwave to do a simplified version of this. So experiment a bit and let me know your favourite version.
